Trachana or Tarhana is traditionally a mixture of milk (sweet) or sour milk (also yoghurt, sour) with whole wheat, which is boiled, dried and rubbed through a sieve.
It is usually made in summer so that the trachana is dried and preserved by the sun.
Trachana looks a little like bulgur and is a nutritious and tasty Greek specialty, a great comfort soup in winter.
This trachana is vegetarian and a bit spicy. It is made with pureed vegetables instead of milk.
Ingredients: flour, semolina, leek, pumpkin, onion, red sweet paprika, pepper, water, salt
